Processed Food Documentary: Processed Food vs. Nutritional Needs. The human body runs on food. Once, food shortage was the major concern. After the second world war, technological advances in food production led to a new era, that was characterized by an overabundance of inexpensive food, and relatively little physical activity. In the decades that followed, other sociocultural shifts continued to contribute to the changing way we ate. Women who had previously controlled most of the average family's food preparation now entered the workforce in significant numbers. And the processed food industry began to capitalize on our need for fast, convenient food. This meant that fewer meals were being cooked at home. And since convenience foods were generally higher in calories than home-cooked meals, the average person's caloric intake increased dramatically. Maya Adam, MD, is waging a battle cry against one of America’s most critical – and challenging – public health crises of our generation: childhood obesity. We all know the importance of eating healthy, but not everyone knows that the cookware you use to prepare your dishes is just as important as the food itself. Even the healthiest diet can result in severe health problems if your pots and pans are toxic. Find out which cookware you should avoid by all means for the sake of your own health and the health of your family. The non-stick properties of Teflon cookware are achieved with a coating of PTFE. This is a plastic polymer that, when heated above 572°F, starts to release toxins. These toxic fumes lead to flu-like symptoms called polymer fume fever, informally known as Teflon flu. Another chemical compound found in Teflon cookware is especially threatening since it tends to stay in the body (as well as in the environment) for long periods of time. Try cast-iron cookware instead. It even comes in non-stick varieties. It doesn't leak anything toxic into your food and is actually a nice natural way to increase your body’s iron levels. Though aluminum cookware is usually coated, the coating is prone to chipping, allowing the toxic metal to get right into your food. As for aluminum foil, using it while cooking is even more dangerous. In fact, there’s an established safe amount of aluminum the human body can manage daily, and that’s 20 mg per pound of body weight a day. When you wrap your food in aluminum foil and cook it this way, the amount of this substance that leaks into the food significantly exceeds the permissible level. Consider using glass cookware instead. If you’ve just enjoyed some fish in lemon juice or stewed tomatoes cooked in an uncoated copper pot and you find yourself suffering from extremely unpleasant symptoms (such as vomiting blood, light-headedness, yellowy skin, or gastrointestinal distress, among others) call 911 immediately. Try this safe alternative instead: stainless steel. Just make sure you're buying food-grade stainless steel since this is the only type that doesn't contain any nickel or chromium. Soft ceramic coating isn't durable enough and starts chipping after a few months of daily use. When this happens, lead and cadmium sometimes found in the coating will end up in your food and, thus, in your body. Lead poisoning is one of the most dangerous types of metal poisoning and can result in abdominal pain, headaches, infertility, and other health complications. Try this safe alternative instead: 100% ceramic cookware. Stainless steel is a great cookware option: it's relatively lightweight, scratch-resistant, and comes in non-stick varieties. -Soft ceramic coating isn't durable enough and starts chipping after a few months of daily use. While you can wrap your rotis with just about any subzi or salad that you have on hand, there are some evergreen favourites like the Potato and Corn Rolls! Here, rotis moistened with masala water are rolled up with a mouth-watering mixture of boiled potatoes and sweet corn, perked up with tangy lemon juice and peppy spice powders. Your whole family will really enjoy the succulent filling inside these satiating rolls. Enjoy it in a relaxed way with a cup of tea, or grab a roll and munch on it as you whiz to office, either way it’s a delight to bite into! Potato and Corn Rolls Preparation Time: 20 minutes Cooking Time: 15 minutes Makes 6 kathi rolls Ingredients For The Rotis ½ cup whole wheat flour (gehun ka atta) ½ cup plain flour (maida) 1 tsp oil Salt to taste Whole wheat flour for rolling (gehun ka atta) Oil for cooking For The Corn and Potato Rolls 1 cup boiled and mashed potatoes 1 cup boiled sweet corn kernels (makai ke dane) 2 tbsp cornflour 2 tsp finely chopped green chillies 1 tsp garam masala 2 tsp lemon juice 2 tbsp finely chopped coriander (dhania) Salt to taste 3 tsp oil for cooking and greasing To Be Mixed Into Masala Water 1 tsp chaat masala 1 tsp chilli powder 1 tsp garam masala 2 tbsp water For the rotis 1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water. 2. Divide the dough into 6 equal portions and roll each portion into a 125 mm. (5”) diameter circle using a little whole wheat flour for rolling. 3. Heat a non-stick tava (griddle) and cook the roti using a little oil till golden spots appear on both the sides. Keep aside. For the corn and potato rolls 1. Combine all the ingredients in a deep bowl and mix well. 2. Divide the mixture into 6 equal potions and roll each portion into an oblong shape. 3. Heat a non-stick tava (griddle), grease it with 1 tsp of oil and cook the rolls using a 2 tsp oil till they turn golden brown in colour from both the sides. Keep aside. How to proceed 1. Place a roti on a clean, dry surface, apply a little masala water evenly over it. 2. Place a roll in the centre and roll it up tightly. 3. Repeat steps 1 and 2 to make 5 more rolls. 4. Serve immediately.

Soak the sun-dried tomatoes in enough warm water in a bowl for 10 minutes. Drain well, chop them finely and keep aside. 2. Heat the butter in a broad non-stick pan, add the garlic and capsicum and sauté on a medium flame for 2 minutes. 3. Add the sun-dried tomatoes, spaghetti, fresh cream, chilli flakes, mixed herbs and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. 4. Add the basil and mix well. Keep aside to cool completely. 5. Divide the filling into 8 equal portions and keep aside. How to proceed 1. Combine the potatoes and enough water in a deep non-stick pan and cook on a medium flame for approx. 15 minutes or till the potatoes are 80% cooked. Drain and cool completely. 2. Cut each potato into half vertically and scoop out the centre of each potato halve a little, using a spoon, so that a light depression is formed for the stuffing. 3. Sprinkle little salt over all the potato halves. 4. Fill each potato halve with a portion of the stuffing and sprinkle ½ tbsp of cheese on each potato halve. 5. Bake the stuffed potatoes in a pre-heated oven at 200°C (400°F) for 8 to 10 minutes. Serve immediately.

Introduction: The impacts of food on citizens’ health is an issue currently included in both the political and media agendas. Using the principles of framing theory, this article analyses the discursive strategies used in the coverage of this issue in the three most-read newspapers in Spain: El País, La Vanguardia and El Mundo. Methods: The study is based on the analysis of all the information pieces on nutrition and health published during the first half of 2014 in the aforementioned newspapers. The analysis of these texts pays special attention to the identification of the frames most-commonly used in the coverage of this topic. Results and conclusions: Eating disorders, diets, and especially obesity, have become the most-covered topics in the field of food and health. There is a limited level of journalistic specialisation in this field, and there are omissions of important information in the journalistic pieces on of food and health, such as the name of the writer of the articles, as well as the authors and sponsors of the research studies cited as sources.
